Integrating an application you've built with spreadsheets is easy, until it's hard.

Writing a few web calls, handling the auth required for each individual API (Google Sheets/Office 365/Notion/Airtable/...) is easy... But then when you want to ensure things like global write locking, API access limitation, or more advanced features, you have to do a lot more.

Promotion

Help businesses and developers do more with their applications that write to spreadsheets (online or otherwise), and support more spreadsheets easily. Tons of notes for this idea, as there is a lot of stuff to leverage (you do not have to build most of the tech, you just have to use it properly and make it easy).

Businesses that are serious about interacting with workflows of business people are serious about interacting with spreadsheets. Having an API and SDK they can use to do so (and do more advanced things with) saves them time.

NOTE You can do this idea without the Heroku angle entirely -- just having an API & SDK for making changes to spreadsheets can stand on it's own outside the Heroku platform.
